SPAGHETTI WITH 3 CHEESES

Ingredients:

  • 240 gr spaghetti
  • Butter
  • 1 cup milk cream
  • 100 gr cheddar cheese
  • 100 gr mozzarella cheese
  • 100 gr Parmesan cheese
  • Garlic powder
  • Chopped parsley to taste
  • optional bacon or cooked ham

Preparation:

In a large pan put water, salt and pasta, fry with a little butter, salt and ground garlic. Let it cook for about 10 minutes. Add the cream.

Then, until the cream is heated, add the cheddar, parmesan and grated mozzarella cheese over very low heat. Stir very well until they melt and make a thick sauce.

Drain the pasta and serve on the plate, drizzle with the cheese sauce and sprinkle with parsley and cooked bacon to taste.


Fettucine with shrimp

ingredients

  • Fettucine 1 lb. or any other type of pasta of your choice (cook according to instructions provided on pasta package)
  • 1/4 to 1/2 cup extra virgin olive oil
  • 1 1/2 tablespoons finely chopped garlic
  • 3 tablespoons parsley, finely chopped
  • 1 lb. shrimp (should be well cleaned, skin-on and marbled)
  • 3/4 cup dry white wine
  • 1/2 teaspoon black pepper, crushed
  • 3 tablespoons butter
  • Salt to taste
  • Juice of half a lemon

Directions:

In a large saucepan add the olive oil and garlic and sauté for about a minute.

Add the parsley and shrimp and stir. Then add the butter, dry wine, and salt and pepper to taste. Stir to mix all ingredients well.

Add in the cooked pasta and mix well.
Sprinkle the lime juice and the remaining chopped parsley.


Spaghetti with mushrooms and zuccini.

Ingredients:

  • 500 grams of spaghetti
  • 500 grams of mushrooms, sliced
  • 2 zuccini, chopped
  • 2/3 cup of peas
  • 2 cloves garlic, thinly sliced
  • 2 sprigs of thyme
  • Salt and pepper, to taste
  • 1/3 cup Parmesan cheese, grated
  • ¼ cup heavy cream

Preparation:

In a large pot over medium-high heat, combine spaghetti, mushrooms, zuccini, peas, garlic, thyme and 4 ½ cups water. Season with salt and pepper, to taste.

Bring to a boil, lower the heat and simmer until the liquid has evaporated (8 to 10 minutes).

Stir in Parmesan cheese and cream.


Fettuccinni Alfredo with Shrimp

Ingredients:

  • 250gr long pasta
  • 1 cup milk cream
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter
  • 3 cloves garlic
  • 1 and 1/2 cup shrimp
  • Cilantro to taste
  • Salt

Preparation:

Put a pot with water over high heat, add salt to taste, when it is boiling add the pasta and let it boil for the time indicated on the package (usually 10 to 15 minutes), while the pasta is boiling, prepare the sauce.

Put a frying pan over medium heat, add the butter and when it is melted add the garlic, let it fry for 1 minute, add the shrimp and then add the cream and grated Parmesan cheese little by little and stir until the cheese melts and mixes with the other ingredients (repeat this process until you add all the cream and grated Parmesan cheese).

Once the pasta is ready, add it to the sauce and stir until it is mixed. Leave on the heat for 5 more minutes after mixing the pasta with the sauce, so that it takes flavor.

Serve hot, sprinkle with grated Parmesan cheese and coriander if desired.
